Gluten Free, low carb, Low sugar brownies

Ingredients
1 cup ground almonds, well sifted (most supermarkets do ground almonds)1/2 teaspoon baking powder1/2 teaspoon salt1-3/4 cups Stevia / Erithritol/ Coconut sugar blend (equal parts of each)1/4 cup unsalted butter¼ c. coconut oil½ c. unsweetened applesauce4 ounces unsweetened baking chocolate (or good quality dark choc), chopped2 teaspoons vanilla extract3 extra large eggs, beaten2 egg whites1 cup chopped pecans
Directions
Preheat oven to 350 F. spray a 10" x 15" cake pan with canola oil. Line with parchment paper, leaving 2” overlapping the sides. Stir together almonds, baking powder, salt and ½ of the sweeteners; set aside. In a microwave bowl, on high, melt the butter/ coconut oil and the chocolate, stirring frequently. Add the remaining sweetener, the beaten eggs and egg white, the applesauce and vanilla; beat until well blended. Stir in the dry mixture, mix well, then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 40 squares.

    I changed the recipe a bit. I used only stevia and coconut palm sugar equal parts. It was a little to sweet with stevia. Next time I'll use coconut sugar and half the stevia. But otherwise I liked the recipe. - 2/1/17
