Carrot Apple Loaf

1 large egg1/2 cup packed brown sugar1/3 cup melted coconut oil 1/4 cup coconut palm sugar 1/3 cup organic plain Greek yogurt2 tsp vanilla extract, 1 tsp cinnamon1/2 tsp nutmeg1 Cup organic all-purpose white flour1/2 tsp baking powder1/2 tsp baking soda3/4 cup grated carrots3/4 cup grated apples
* Preheat oven to 350F.
* Spray a 9x5 inch loaf pan with cooking spray & then flour the pan.
* In a large bowl combine egg, brown sugar, coconut palm sugar, melted coconut oil, greek yogurt, vanilla, cinnamon & nutmeg.
* Add in flour, baking powder & baking soda & mix carefully.
* Fold in grated carrot & apple.
* Bake for 45 - 52 minutes
