Olive oil, Vegetables chopped: onion, carrot, celery, zucchini, green beansShredded savoy cabbage, chicken broth, canned tomatoes
In large soup pot,
Sauté onion in olive oil over medium heat when translucent add each vegetable (onion, carrot, celery, zucchini, green beans, savoy cabbage) individually and sauté for a couple of minutes before adding the next. Add the chicken broth and bring to a boil. Cube the tomatoes and add tomatoes plus their juice to the pot. Simmer for 3 hours.
