High Protein Gluten Free Quinoa, Bean and Corn Chili

Ingredients
olive oil 2 tspminced garlic 2 tspquinoa, uncooked, 1 cup26 oz crushed or diced tomatoes8 oz tomato sauce1 cup water ( or more if needed)1 8 oz can of black beans1 1/2 cups sweet corn2 tsp chili powder1/2 tsp smoked paprikasprinkle of cayenne peppersalt and pepper to taste
Directions
cook garlic in oil in med. saucepan until brown and then add in garlic, paprika, chili powder, cayenne, salt and pepper. cook for 2 mins. Add crushed tomatoes, tomato sauce and water, add quinoa and bring to a boil. Simmer for 30 mins adding more water as needed. Taste and season as needed with salt, pepper and chili powder. Add corn and black beans, boil for 5 mins . Add water and/ or tomato sauce to reach desired consistency. can be served with sliced avocado or cilantro. I love it with a bit of fat free ranch dressing drizzled on top ( but that is not vegan)
