Cauliflower and White Bean Salad

Florets from one head cauliflower (about 3 C)1 Can Cannellini or other white beans1 C cherry tomatoes, halved1 small Red Onion, diced1 C chopped parsley1/4 C olive Oil1 T White wine vinegar2 t lemon juice2 cloves garlic, mincedsalt & pepper to taste
Remove florets from one head cauliflower. Break or chop into small pieces (2-3 times the size of the beans you plan to use). Place in 2 quart or larger mixing bowl.
Add to bowl:
Cherry tomatoes, sliced in half (or quartered if big).
Diced Red Onion
Finely chopped Parsley
Drained and rinsed beans
crushed Garlic
Vinegar
Lemon Juice
Olive Oil
Stir to mix. Taste and adjust seasoning (salt & pepper) as needed.
Serving Size: Approx 6 1-cup servings
