Kickin' Cowpea Dip and Spread

Ingredients
2 cups cooked or canned black eyed peas (cowpeas), drained and rinsed2 tbsp medium chunky salsa1/2 jalapeno pepper, seeded and minced1/2 - 1 tbsp water1 1/2 tbsp apple cider vinegar1 clove garlic, minced1/2 tsp salt1/4 tsp cumin1/4 tsp paprika1/4 tsp onion powder1/4 tsp ancho chili powder1 tsp sugar or substitute (I used stevia)
Directions
Combine all ingredients in a food processor and puree until smooth and thick.
Adjust seasoning to taste and serve.
Keeps covered in the fridge up to 1 week.

Serving Size: Makes ~ 2 1/4 cups, about 9 servings
