Ingredients
2 Cups all purpose Gluten Free Flour2 Tsp Stevia1 Cup Coconut Flakes1 Tbls Baking Powder1 Tsp Baking Soda1 Tsp Xanthan Gum1 Tsp Salt1 Cup Coconut Milk1 Cup Coconut Oil4 Eggs1 Tsp Vanilla Extract
Directions
Preheat oven to 350 degrees F. Grease and Flour baking dish. Whisk together dry ingredients in a mixing bowl. Add milk, oil, eggs and vanilla and mix until smooth. Spread in baking dish. Bake for 45 minutes or until toothpick inserted in the center comes out clean.

Serving Size: Makes 2 9 inch round cakes or 1 9x13 inch sheet cake
