Cajun Stuffed Pepper

Ingredients
1 Cup black beans 3/4 lb Ground Chicken 1 tsp Tony Chacheres Lite Creole Seasoning 1 cup onion chopped 2 Garlic cloves minced 1 can Hunt's Fire Roasted Diced Tomato, 1.75 cup 2 large Celery stalks,chopped 3 Med. Green Bell Pepper, stalk and seeds removed
Directions
Cook Rice according to pkg directions.

Add Tomatoes (juice included), onion, garic, celery and seasoning to skillet. Cook until onions are translucent, then chicken, cook until done. Add beans last.
Spoon mixture evenly into the 3 hollow bell peppers, and put into a 375 degree over for about 30 minutes.

Serving Size: Makes 3 overstuffed peppers/servings
