Crustless Pepperoni Pizza Casserole

Ingredients
8 oz. ground beef4 oz. sliced turkey polska kielbasa1.75 oz sliced pepperoni1 diced red bell pepper1 diced onion1 can Hunt's Fire Roasted Diced Tomatoes1 tsp. dried oregano1 tsp. dried thyme1/4 tsp. dried red pepper flakes8 oz shredded Mozzarella cheese4 oz shredded Parmesan cheese2 beaten egg1 small spaghetti squash, cooked and shredded
Directions
Brown ground beef in skillet, add polska kielbasa, diced onion and bell pepper. Cook about 5 minutes, or onion is translucent, add can of diced tomatoes and spices. Let cool. In large mixing bowl, beat eggs and add cooled, cooked spaghetti squash. Mix thoroughly. Add cooled meat mixture. Mix until well blended. Pour into 9X13 baking dish. Place sliced pepperoni on top and bake for 30 minutes. Remove from oven and sprinkle cheeses on top. Bake an additional 10-15 minutes, or until top is browned.
Let sit for 10 minutes and serve with red pepper flakes and grated parmesan cheese. Can also garnish with fresh chopped parsley, pineapple bits and/or jalapeno peppers.
