Pumpkin Pancakes with a healthy "Coo-twist"

Ingredients
1 1/2 cups low fat buttermilk1- 15oz can of Pumpkin puree2- jumbo eggs2 TBL coconut oil2 tsp. vanilla extract2 1/4 cups Brown Rice Flour1/4 cup blackstrap Molasses2 tsp. Baking Powder1 tsp. Baking Soda1 1/2 tsp Cinnamon1 tsp Pumpkin pie spice1/2 tsp ginger1/2 tsp nutmeg1/2 tsp salt2 TBL Whey Protein Powder
Directions
Mix all the wet/liquid ingredients first, then mix in dry. Cook on a hot griddle until bubbles begin to form - flip and cook another minute or so. Serve warm. Very very good and hearty!
