Spicy Peanut Chicken -- slow cooker

Ingredients
1 T olive oil2 onions chopped2 carrots diced4 stalks celery, diced4 cloves garlic minced1 T ginger root minced1/2 t cracked peppercorns1 c chicken stock3 lbs skinless bone-in chicken thighs (about 12 thighs)3 T peanut butter2 T lemon juice2 T soy sauce2 t red curry paste1/2 c coconut milk2 c sweet green peas1 red pepper, diced1/4 c chopped peanuts1/2 c cilantro
Directions
In skillet, heat oil 30 seconds. Add onions, carrots, celery, and cook, stirring, utnil carrots soften. (7 minutes) Add garlic, ginger and peppercorns and cook, for 1 minute. Add chicken stock and bring to a boil.

Arrange chicken over bottom of slow cooker and add veggie mixture. Cover and cook on LOW for 5 HOURS, or HIGH for 2.5 HOURS.

In a bowl, combine peanut butter, lemon juice, soy sauce, and curry paste. Mix well, add to slow cooker. Add coconut milk, peas, and red pepper and stir well. Cover and cook on HIGH for 20 minutes. Garnish with peanuts and cilantro.
