Black-eyed peas Jambalaya

Ingredients
brown rice, uncooked shrimp, breakfast sausage, tomatoes, black-eyed peas, lime juice, Louisiana seasonings, salt, red chili pepper.
Directions
Cook rice with salt till almost done. Set aside. In heavy bottomed pan, brown diced sausage links. Add chopped tomatoes. Simmer for 5 minutes. Add reconstituted, slightly cooked black-eyed peas (or cook peas in the mixture if using a pressure-cooker). Add chili powder, seasoning, lime juice. Add rice. Add diced, shelled shrimp. Simmer on very low heat for an hour, periodically adding hot water. Four servings (2 cups each)
