Broccoli, Potato & Blue Cheese Soup

Ingredients
2 tbsp olive oil2 potatoes diced1 medium onion chopped8 oz broccoli florets4.5 oz blue cheese4.5 cups vegetable stock2/3 cups simply smart fat free milk
Directions
Heat olive oil and saute potatoes and onions for 5 minutes. Add broccoli, cheese and vegetable stock. Bring to a boil, lower heat and simmer for 25 minutes. Using an immersion blender blend until smooth. Add milk and stir. Serve with a sprinkle of paprika on top and extra broccoli that has been steamed to crisp tender if desired.
