Italian Mason Jar Soup

Ingredients
1 small garlic clove, finely minced1 tablespoon shallot, finely chopped6 tablespoons quinoa, cooked1 small zucchini, roughly grated or spiralized3/4 cup tomato sauce1/4 teaspoon dried oregano or thymeGenerous pinch of sea salt and black pepperPinch of chili flakes or cayenne1 tablespoon grated parmesan1 small handful basil leaves4 chopped olives or sun-dried tomatoes (optional)1/4 to 1/2 cup water (depending on how thick a soup you prefer)
Directions

1. Combine all ingredients in a heatproof jar, making sure to add basil leaves last so they are on top. Keep refrigerated until ready to eat.

2. When ready to eat, boil water and remove the basil leaves from the jar.

3. Let the boiled water sit for a minute or two before adding it to the jar, leaving a half-inch gap at the top.

4. Stir, cover, and let sit 5 minutes.

5. Stir again, tear the basil leaves and add to the jar, and enjoy.
