Chicken Salad

Ingredients
2 Chicken Breasts1 tsp. Butter1 TBS Olive OilSeasoned SaltGarlic PowderSalt & Pepper1 Cup Green Grapes, quartered2 Stalks Celery, diced1 Cup Mayo, I use Hellman's (you can lower the fat by using a different mayo)1/4 cup sliced Almonds
Directions
Place a little olive oil in a pan with 1 tsp. of butter, when pan is warm, place chicken in and sprinkle with season salt, garlic powder, salt and pepper (or plain if that is what you like). Cook chicken covered for approx. 20-25 minutes on medium heat, flipping over several times. Check inner temperature with thermometer to make sure at least 165-180 degrees, let srand 5 minutes. While chicken is cooking, dice celery and put in bowl, also add mayo, almonds and quartered grapes. mix. After chicken has cooled, cut in small chunks and add to the other ingredients. This is good in a wheat pita with tomato, lettuce and spinach, or on a bed of lettuce, or even right out of the bowl! ENJOY!
