Cook up Rice

Ingredients
Chicken 2-3 lbRice 2.5 Cup uncookedPigeon Peas (or favorite bean)Coconut Milk 1 CanScallions 3-4Onion 1 LargeGarlic 3 clovesRosemary sprigCasareep or browning sauce 1Tbsp6 cups water
Directions
Cut Chicken into 1inch cubes fry in 1 Tbsp Coconut oil or butter until brown. Remove from pan add scallions, onion, garlic, cook a few minutes. Add coconut milk, chicken, casareep, rosemary cook a few minutes until almost boiling. Add 6 Cups water, uncooked rice, pigeon peas, Pepper,cook uncovered 30 minutes or until rice is done but still a bit soupy. Remove pepper.
Eat or chill, better the next day!
