Banana oatmeal cookies

Preheat oven to 350 degrees. Stir 1.5 T of chia seeds into ¼ cup of unsweetened almond milk (or other dairy or non-dairy milk). Let sit for 10 minutes (will form a gel).
Mash 2 ripe bananas. Mix bananas with the chia seed mixture, ¾ C old-fashioned oats; ¼ C unsweetened coconut; 1T almond butter; generous pinch of cinnamon (or more to taste).
Gently stir in ½ C chopped dates and, if desired, ¼ C chopped dark chocolate.
Drop by heaping teaspoonful onto ungreased baking sheet. Bake 17-20 minutes.
