half pound ground beef 93% lean1 onion chopped3 cloves garlic minced1 cup frozen peas2.3 cup canned or frozen corn (lower sodium if frozen)1 14.5 oz can of stewed tomatoes, no salt added4 chipotle peppers in adobo saucehalf cup red lentils1 tbsp tomato paste1 cup beef broth no sodium addedi Tbsp curry powder1 tsp cinnamonhalf tsp ground cloveshalf tsp ground cumin1 Tbsp olive oil
saute onions for 5-8 minutes in olive oil
saute garlic for 1 minute,
add ground beef and brown
add bouillon, tomatoes, tomato paste and spices
bring to gentle boil and add lentils
simmer for 15-20 minutes
add peas and corn and simmer addition 15-20 minutes or until lentils are tender
