Baked Bacon Wrapped Cheese Stuffed Brats

2 tablespoons EVOO1 onion, thinly slicedSprinkling of salt¼ teaspoon sugar2 Bratwurst links, uncooked2 slices of your favorite cheese, cut into strips or 1 ounce of your favorite shredded cheese, divided2 buns split in half and toasted2 bacon strips, uncookedWater soaked toothpicksMustard, additional shredded cheese and other condiments or whatever else you like.
1. Add EVOO to a cast iron skillet on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.
2. After 10 minutes, sprinkle some salt over the onions, also you can add some sugar to help with the caramelization process. To keeping the onions from drying out as they cook is to add a little water to the pan.
3. Meantime, preheat the oven to 450°F.
4. Cut a slit into each Bratwurst link, careful not to cut through to the other side. Leave about one half-inch of the link intact on each end.
5. Layer the cheese inside the slit of each bratwurst but don’t overstuff! Pinch the brats closed as much as possible.
6. Starting at one end of the bratwurst, wrap one Bacon strip around the brat until it is a spiral down the length of the sausage. Allow some of the brat casing to show; you may have to trim the bacon.
7. Take the soaked toothpicks and pierce the brats to keep the bacon in place.
8. Place the bacon wrapped brats an ovenproof dish or in another cast iron skillet.
9. Cook for about 5 minutes, remove from the oven and turn the brats.
10. Return to the oven and cook until the bacon is perfectly crisp to your liking and the bratwursts show no hint of pink inside. This should be at least 5 minutes. Bratwursts are done when the casing is a medium-brown color.
11. Remove toothpicks and place in buns.
12. If desired, throw on some sautéed onions, more shredded cheese and other condiments and go to town!
