Lemony Sauteed Zucchini

4 whole medium green or yellow zucchini (it should equal about 8 cups once sliced)1 large roughly chopped onion5 oz (1 cup) grape or cherry tomato cut in halves3 cloves of garlic choppedJuice from 1 whole large lemon or from 2 small lemon4 tablespoons of cilantro chopped2 tablespoons of avocado oil (or other healthy oil)spices to taste:cayenne (optional)black peppersalt
Chop all the veggies and garlic. Set the chopped red onions, tomatoes and cilantro to the side.
In a bowl, toss the zucchini in 1 tablespoon of the avocado oil, and some of the lemon juice with all of the spices.
Heat the pan and add the remainder of the avocado oil. Once it starts to get hot, start sauteing the garlic and white onions. After about a minute, toss in the zucchini and some more spices if you'd like and let that saute for about another minute.
Now add in the tomatoes, red onions, cilantro and any additional lemon juice. Remove from heat and serve.
It should take about 5 minutes total depending on how crunchy or soft you want it.
Serving Size: makes about 10 - 1 cup servings
