3/4 c water1/2 c plain cous cous1 large roma tomato diced1 large slicing cucumber diced1/2 red bell pepper diced1/2 green bell pepper dicedlemon juice about 2 tsp1 tsp Sesame oil1/4 tsp sea salt 1/2 tsp fresh ground black pepper1 tsp Mrs. Dash Tomato/Garlic Mix1 tbsp chopped onionparsley if you have it
Prepare the cous cous and set aside. Chop and add all the fresh veggies, spices, and lemon juice etc. This is where the time comes in--how fast can you chop -- that's your prep time ! Stir thoroughly. Refrigerate for 1/2 hour to blend flavors. Usually keeps a couple of days for me.
This will make just under 5 one-cup servings. Add a couple bunches of parsley and it will be a generous 1 c serving.
