Penne Pasta with Vodka Sauce

Ingredients
1 Tbsp olive oil1 small onion, finely chopped3 cloves garlic, crushed1 (5.5oz can) tomato paste1 tsp salt1/2 tsp pepper1/4 cup vodka4 cups penne pasta1/2 cup grated parmesan cheese
Directions
Heat oil in saucepan over medium heat. Stir in onion and garlic and "sizzle" it until onion is translucent (don't let garlic get brown). Stir in half and half, tomato paste, salt, pepper, and vodka. Simmer for 10 minutes.

Meanwhile, cooke penne according to package. Stir 1/4 cup of parmesan cheese into tomato sauce mixture. Stir into cooked penne and mix well.

Top with remaining parmesan and serve immediately.

    I liked this recipe.. I added peas but boyf was not happy with that decision.. haha. .I didn't know how much half and half to use so I guessed 1/2 a cup. - 4/6/10
