Rice flour baked banana custard

Ingredients
Directions
1 cup soy/rice/oat milk30 grams rice flour1/2 banana1 tsp sugaregg substitute equivalent to one eggvanilla essencenutmeg
Preheat oven to 150C
heat most of the milk to near boiling point
blend the rest with the rice milk to make a paste then pour the near boiling milk over paste and blend
return to pan and heat until thickened
stir in sliced banana and sugar
allow to cool a little and stir in beaten egg substitute
pour into greased oven-proof dish (a small one)
bake at 150C for about 45 - 50 mins
try finishing it under the griller for extra brown top.
Makes 2 servings.
