Greek Bean & Veggie Salad

Ingredients
1 can mixed beans (6 bean blend)1 can chick peas (or any other beans you like)200g tub feta cheese1/3 english cucumber, diced1/2 yellow bell pepper, sliced1/2 red bell pepper, sliced1/2 red onion, sliced thin3/4 container cherry tomatoes, halved2 stalks of celery, slicedApproximately 1/2 the bottle of Greek Salad DressingOptional (not included in nutrition calculations) - 1/2 can sliced black olives
Directions
No cooking needed!
Rinse beans under cold, running water until the water is clear. Drain & dump in a bowl.
Chop, slice or dice the veggies any way you like & add to the bowl.
Crumble the feta cheese into the bowl.
Add the dressing & stir.
Best if left overnight in the refrigerator for the flavours to infuse the beans.

Serving Size: Makes approximately 12 1 cup servings.
