1/2 cup extra virgin olive oil4 tsp Champagne Vinegar1 tsp Grey Poupon Dijon Mustard1/4 scallions sliced2 cilantro fresh, chopped1 lime peel grated1 g black beans drained & rinsed1 cup corn kernels1/2 cup red pepper diced1 fully ripe Avocados from Mexico halved, pitted, peeled and diced
In large bowl, whisk together first three ingredients for salad dressing,
Add scallions, cilantro and lime peel, mix well.
Stir in beans, corn and red pepper.
Add Avocado; toss gently.
Season with salt, if desired.
