Chicken and Rice Salsa Verde

2 3/4 cups brown rice, cooked (1 cup dry rice)2 1/2 cups shredded chicken breast (2 large chicken breasts)2 cups salsa verde3 1/2 cups french cut green beans1 1/2 cup chopped onion1 1/4 cup shredded cheddar cheese
Preheat oven to 350 degrees.
Spray the bottom and sides of a 3 quart glass baking dish with canola spray.
Combine all ingredients except cheese and layer evenly into the baking dish.
Cover and bake for 1 hour.
Remove cover and sprinkle the shredded cheese evenly over the top.
Continue baking, uncovered, for 10 minutes or until the cheese is melted.
Serving Size: makes five 2-cup servings
