Cinnamon Raisin Kugel

1 package (8 ounces) fat free cream cheese, softened2 tablespoons butter, melted3/4 cup sugar substitute3 eggs (or 3/4 cup egg substitute)2 egg whites1/2 cup skim milk1 teaspoon vanilla1/2 teaspoon ground cinnamon, divided4 cups (8 ounces) wide egg noodles, cooked and drained1/2 cup golden raisins2 tablespoons sugar substitute
1. Beat cream cheese and butter until well combined. Mix in 3/4 cup sugar substitute, eggs and egg whites, milk, vanilla and 1/4 teaspoon ground cinnamon until well blended. Stir in cooked noodles and raisins.
2. Pour mixture into 13 x 9-inch baking pan well sprayed with non-stick cooking spray. Combine 2 tablespoons sugar substitute and remaining 1/4 teaspoon ground cinnamon. Sprinkle over top of noodle mixture.
3. Bake in preheated 350°F oven 20 to 25 minutes or until knife inserted near center comes out clean. Serve warm.
Makes 12 (approximately 1/2 cup) servings.

I´ve prob´ly made this a dozen times. i likeit for breakfast. Quick! Also great with cooked fruit - add a little cornstarch mixed in water and microwave w/the fruit first - then use in recipe. Have you heard of precooked noodles? Do a search on Amazon.com. They save time and mess! - 3/19/07
