6 Trader Joes Tandoori Garlic Naan2 T Butter melted4 t Italian seasoning (not dressing) blend of seasoning1 pound skinless chicken breasts, pounded to 1/2 inch thickness and diced/chopped into bite size pieces1/4 t each salt and pepper1/2 t garlic powder1 Cup cherry tomatoes, halved (you can use thin slices of roma tomatoes as well)1/2 C spinach leaves. thinly sliced or chopped1/4 C shredded parmesan cheese1/4 C shredded mozzarella cheeseOptional: 1 T fresh basil (chopped), 1/4 C chopped sun dried tomatoes
1. Preheat over to 400. Line a large baking sheet with nonstick foil and spray lightly with cooking spray.
2. Season Chicken breast with salt, pepper, and tsp of Italian seasoning. Cook is a large pan over medium high heat for 6-8 minutes until Chicken is cooked through and juices run clear. Set chicken aside.
3. Whisk together melted butter and 2 tsp Italian seasoning. Brush over flat bread. Sprinkle evenly with mozzarella cheese. Scatter chopped spinach over cheese. Add tomatoes and chicken. Sprinkle with parmesan cheese. If using optional basil and sundried tomatoes, add now. Sprinkle reamining 1 tsp Italian seasoning over the parmesan cheese.
4. Bake flat breads 6-8 minutes until cheese is melted.
