Brownie Cookies - Gluten Free Vegan

Ingredients
Ingredients1/3 cup coconut flour1/4 cup cocoa powder1 tsp baking powder1/4 tsp salt1/2 TB stevia powder or to taste2 ripe banana1 tsp vanilla2-3 TB Coconut Milk (full fat)
Directions
Pre-heat the oven to 350F

In a large bowl stir coconut flour, cocoa powder, baking powder, stevia and salt together with a fork, breaking up any lumps.

In a medium bowl, mash the banana, milk and vanilla and stir well with a fork. For extra smooth treat process this in the blender. Cookie is lighter and makes more cookies.

Add the wet ingredients into the dry and stir well until incorporated. It should be thick, sticking together but not runny, like play dough. If batter is too dry and not sticking together add more coconut milk.

Drop batter by tablespoons onto a cookie sheet prepared with parchment paper. Smoosh them down a bit.

Bake 12-15 min
