Lentil Veggie Burgers

Ingredients
2 T chia seeds1/2 cup water1 cup cooked lentils, unseasoned1/4 cup chopped sweet onion1 raw carrot1 small stalk celery3 cloves garlic1/2 teaspoon ground cumin1/2 teaspoon Celtic sea salt1 T avocado oil for high heat
Directions
Grind chia seeds (I used NutriBullet, but spice grinder or mortar and pestle will do). Add half cup water to ground chia. Let sit 10 minutes or until gelatinous. Chop onion, carrot, celery, and garlic and cook in a little water. (Drink the resulting broth for the yummy flavor and nutrition!) Put lentils in mixing bowl and add chia mixture and cooked veggies. Add cumin and salt. Heat skillet with avocado oil. Drop one quarter of mixture in a burger shape in pan. Cook until brown on medium heat. Turn and brown second side.

Serving Size: Makes 4 burgers; nutritional information is for 2 burgers as one serving
