Cinnamon Apple and Carrot Breakfast

Ingredients
3 medium carrots peeled1 Apple, peeled and cored3 prunes2Tbsp Flaxseed (I ground mine a bit)2 tsp Ground Cinnamon2Tbsp chopped walnuts
Directions
Pulse apples and carrots in food processor. Chop prunes into small pieces. Place Apple, carrots, prunes and flax in a small sauce pan. Put enough water to just met the level of the mixture. On medium heat bring to a gentle boil. Turn down to low. Stir in cinnamon and allow to simmer until apples are tender. Remove from heat and allow to cool slightly. While still warm, place mixture back in food processor and pulse to desired consistency. Top with chopped walnuts.
