Courting Cake

1 cup of butter1 cup of granulated sugar4 eggs,beaten1 1/2 cup self rising flour 2-3 tbsp milk10 fl oz whipping cream1 cup of fresh strawberries slices0.75 cups of confectioners sugar
1. Grease and flour three 7 inch (18cm) round cake tins
2. Cream and butter and sugar together until pale and fluffy. Gradually add eggs, beating well after each addition. Fold in flour, and add just enough milk to give a soft dripping consistency.
3. Divide mixture evenly between the cake tins and bake at 375 degrees Fahrenheit for 25-30 mins, until top springs back lightly when toughed. Cool on wire racks.
4. Whip cream until it holds it shape. Sandwich the layers together with the cream and berries. Saving some for decoration. Sprinkle top with confectioner's sugar and decorate with remaining berries.
