Mussels with Coconut Milk and Gochujang

Ingredients
Bean Thread Noodles, half packageMussels, 16 oz 1/3 cup plus 3 Tbsps. coconut milk-light, 1 serving Garlic, 1clove Scallions, raw, 3 medium (4-1/8" long) *gochujang, 1 tbsp Chicken Broth, 0.25 cup (8 fl oz)
Directions
boil water, add bean thread noodles and let soften

chop scallions and garlic
stir fry
add chicken broth
add gochujang and whisk to mix
add coconut milk
let it come to simmer
add Mussels
Cook 3 to 4 min., until open

Divide the mussels in half and serve with sauce over half the bean threads for each serving.

Squeeze a bit of lime juice on top
