German Mustard Potato Salad

Ingredients
2 lb red potatoes1 1/2 cup chopped celery1 1/2 cup chopped red onion1 1/2 cup chopped bell pepper1/2 tablespoon Dijon mustard1 tablespoon whole-grain mustard1 tablespoon white-wine vinegar, or to taste1/2 teaspoon black pepper3 tablespoons olive oil2 tablespoons chopped fresh flat-leaf parsley
Directions
- cut potatoes into evenly sized pieces; boil potatoes
- rinse cooked potatoes under cold water until they are cool enough to handle, cut into think slices
- combine all ingredients
