Chocolate-Chip Granola Bars

1 C chocolate chips1/2 C coconut oil1/2 C light corn syrup1/4 C light brown sugar1/4 C granulated sugar1/4 t salt1 t vanilla extract1/2 C sweetened, shredded coconut1 C sunflower seeds, unsalted2 3/4 C rolled oats2 1/4 C crisp rice (Rice Krispies)
Line a 9.13-inch cake pan with foil. In a medium sauce pan combine the coconut oil, corn syrup, brown sugar, granulated sugar, and salt over low heat. Remove the sugar mixture from heat. Add the vanilla extract. Stir to combine.
Meanwhile, in a separate large bowl add the shredded coconut, sunflower seeds, oats, crisp rice, and chocolate chips. Toss well to combine evenly. Add the sugar mixture and mix well. Scrape into the foil-lined pan and press down on the mixture firmly to compact (I used the back of a measuring cup). Cover and refrigerate until firm. Remove bars from pan, peel away the foil and cut into bars.
Serving Size: Makes 36 1"x 3" bars
