Ranger Cookies

Ingredients
1 cup white wheat flour1/4 cup all purpose flour1/2 tsp baking powder1/2 tsp baking soda1/4 tsp kosher salt6 Tbsp unsalted butter1/2 cup unrefined sugar1 Tbsp molasses1 egg2 cups brown rice crisp cereal3.5 ounces shredded coconut or about 13 Tbsp1 cup raisins or diced dates
Directions
Preheat oven to 375
Stir together the flours, baking powder, baking soda, and salt; set aside.
Cream the butter for half a minute, then add the sugar and molasses until light and fluffy. Beat in the egg.
Slowly mix in the flour mixture until combined.
Stir in the cereal, coconut, and raisins.
Chill the dough for 20 minutes.
Drop by teaspoon 2 inches apart on an ungreased baking sheet and bake for 8-10 minutes. Let cool 2 minutes before moving to a cooling rack.
