Publix Caribbean Beans and Brown Rice

Brown Rice, long grain, 1 cup Beans, black, 2 cup Sweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2", dicedScallions, raw, 0.25 cup, chopped Lowry's Seasoned Salt, 1 tsp Extra Virgin Olive Oil, 1 tbsp
Boil 2.5 cups water, along with seasoned salt and olive oil. Add rice, stir. Cover, and reduce heat to low. Simmer over low heat for 30-35 minutes. Add peppers, scallions, and beans; stir. Continue simmering over low heat for an additional 10-15 minutes. Let sit for at least 5 minutes before serving, to allow all liquid to be absorbed.
