Cherry Almond Muffins - Low Carb

2 C. almond flour - finely ground1 t. baking soda1 t. Lite Salt4 eggs - separated1 C. unsweetened applesauce1/3 C. coconut oil - melted24 servings liquid stevia or monk fruit extract1 t. almond extract (optional)1 C. pitted sour cherries
Preheat oven to 375 degrees. Mix first 3 ingredients, set aside. Mix egg yolks, apple sauce, coconut oil, stevia or monk fruit extract, and almond extract. Beat egg whites until soft peaks.
Prepare muffin pan with papers and non-stick spray on top of papers. Now mix dry ingredients with wet ingredients until just barely mixed. Fold in beaten egg whites gently until barely mixed. Use 1/4 c to spoon into prepared muffin pan. Bake until toothpick come out clean plus 2 minutes.
