Fanny Farmer's Devil's Food Cake

4T cocoa3T water1 c +3 T sugar1/2 cup milk1/4 pound or 1 stick butter softened1 t vanilla2 eggs separated1 c flour1/2 t each--cream of tartar, salt, and baking soda
preheat 350 butter and flour two 8" pans. In a saucepan, mix cocoa, 3 T water and 3 T sugar. Whisk over low heat until it is smooth and remove from heat. Cream sugar and butter, add the vanilla, and 1/2 cup sugar and beat until light. Beat in the egg yolks, and then if cocoa mixture is cool, slowly drizzle in while beating. It may look odd, but the butter will incorporate as you add the flour later. Mix in remaining dry ingredients. Beat egg whites while adding 1/2 cup sugar until stiff but not dry. Fold into chocolate mixture and pour into prepared pans. Bake for 25 minutes and check for doneness. May go as long as 35 minutes. Take out and allow to cool in pans for 5 minutes, then turn out onto racks. Frost as desired.
