Chicken and Mushroom Fried Rice

2 x chicken breasts1 cup Mushrooms2 cups brown rice50g mange tout30g spring onions2 eggs2 tbsps light soy sauce1 tbsp dark soy sauce1 tbsp sweet chilli dipping sauce1 tbsp sesame oil1 tspn lazy garlic1 tspn lazy ginger chopped
Cook of the chicken and mushroom, and place to one side.
Half scramble/dry fry the eggs
Place the Mange Tout, in a couple of tbsps water and cook for a few mins, andd the spring onions, lazy garlic and lazy ginger, and continue to cook to your liking.
Meanwhile, boil the rice.
Add the rice to the vegetables, together with the rice and then add the egg, stir until mixed and cooked through.
In a jug, mix the soy sauces, chilli dipping sauce and the sesame oil, pour over the dish, mix and serve.
