1 2/3 c vegetable broth1 medium onion, diced3 garlic cloves, minced1/4 t ground thyme1/4 t ground cumin2 t Cajun seasoning2 15 oz cans black beans (drain one, puree the other)
In a large saucepan, combine onions and garlic with enough broth to cover. Cook until onions are soft. Add seasonings and cook 2 minutes, stirring constantly. Add remaining broth, beans, and bean puree and bring to a boil. Reduce heat to low and simmer 30-45 minutes.
Alternative preparation: Add all ingredients to a crockpot and let simmer for a few hours.
Makes approximately 4 1-cup servings.
