Cottage Cheese Egg Scramble

Ingredients
1/4 cup cottage cheese, mashed finely2 large eggs1/4 tsp. cinnamon1/4 tsp. nutmeg2 Tbsp. Splenda
Directions
Mash cottage cheese with fork until finely mashed. Add eggs and mix thoroughly. Add cinnamon, nutmeg and splenda. Mix well. Pour into non stick fry pan ~ cook with lid on for 3-5 minutes. (It should smell good and be lightly browned on the bottom). Then flip and cook the other side another 3 minutes- (uncovered). Serve hot. Enjoy!
