Chicken Fennel Salad with Cashews and Cranberries

Ingredients
3-4 cups cubed cooked chicken (I use 3 Trader Joe's chicken breasts)1 large fennel bulb, diced1/2 cup roasted cashews, unsalted1/2 cup dried cranberries2 tbls light mayo1 tsp dried sage2 tbls fresh parsley, mincedsalt and pepper to taste
Directions
Simply mix all materials in a bowl. Spoon onto romaine lettuce leaves to serve.
