Cucumber and Smoked Salmon Salad

Ingredients
2 large Cucumbers, spaghetti style8 slices Smoked salmon3 Tbsp Olive oil1 Tbsp Whole grain mustard1/2 Tbsp Maple syrup1 Tbsp Lemon juice2 tsp Dill weedSalt & Pepper to taste
Directions
Prepare the vinaigrette by whisking mustard, syrup, lemon juice, oil, salt and pepper. Add dill weed.

Wash and peel the cucumbers and cut into spaghetti style.

Place two slices of salmon on a plate with cucumber on top. Drizzle with vinaigrette.
