Ingredients
3 large heads of raw cauliflower, shredded6 roma tomatoes, diced6 persian cucumbers, peels on, diced8 green onions, finely sliced3 lemons, juiced1 cup flat leaf parsley1/2 cup mint (spearmint)about 6 T extra virgin olive oil + more for servingsalt and pepper
Directions
Mix together and serve with a fine drizzle of good olive oil and fresh ground sea salt and black pepper.
