Mushroom Feta Frittata

Ingredients
Ingredients:1 Tbsp Oil16oz sliced cremini mushrooms1 cup Shredded Carrots 1 medium Zucchini, diced1 medium tomato, diced 1/2 bag of Trader Joes' Organic Green Power Salad4oz Fat Free Crumbled Feta 8 large eggs1 1/3 c. Egg Whites1/2 tsp. salt1/2 tsp. black pepper1/2 tsp. thyme1/2 tsp. marjoram1.5oz Salame, diced 1 oz parmesan cheese2 Avocados, sliced
Directions
Preheat oven to 375. Heat oil in a large oven proof saucepan, saute mushrooms and carrots, on medium heat stirring occasionally. When they have softened, add zucchini, greens and tomato. Cover and cook about 3-5 minutes or until zucchini is softening and greens are wilted.

In a large bowl, beat eggs, egg white, feta, spices and salame.

Pour egg mixture into pan, lower heat to medium low, cover and time for 10 minutes.

Remove lid, sprinkle parmesan over top of frittata. Place pan in oven and cook about 15 minutes, or until mixture is cooked through. Slice into 8 pieces and top with sliced avocado if desired.
