- Number of Servings: 1
Ingredients
Directions
1 can of lentils (rinsed well) - you can use lentils that need soaked overnight, i just used heinen's organic, 1 can...1 cup uncooked bulgar 1 cup veggie or chicken stock 1/4 cup chopped onionok - this is annoying, i know, but i don't measure stuff - i just eyeball it with the amounts i like:chervil basilsalt squeeze or two of lemon juice2 tablespoons plain greek yogurt*you could prob put some pepper in - i didn't because i am allergic to fresh pepper*you could prob put garlic in too - i only like garlic in certain things lolDirections:bring the broth to a boil, dump in the bulgur. i used a whisk to make it all even and in the broth. i stirred it often for about 3/4 minutes. then i covered it, and turned off the burner. i left it like that for 10 minutes. i didn't wanna sautée the onion in all of that butter (well i DID haha but...) so i put them in a custard cup, put two drops of butter in there, and cooked in microwave for 44 seconds. when the 10 minutes are up, add lentils and onions and stir. then add in the herbs you're using, and then yogurt... spray muffin pan with olive oil (or cooking spray - i just have one of those olive oil spray bottles)scoop into muffin tin - don't totally fill it up, maybe like 3/4 and press it down a little so it's not loose...bake at 350* for 25 minthey're a little crumbly - but i mostly put them in the muffin tin for portion control so i know how big they are - i can have two in one serving. i froze two at a time in a snack sized bag... it made a dozen total.
bake at 350* for 25 min
