Cookies2 cups shortening1 1/3 cup sugar2 eggs2 cups cooked mashed carrots1tsp. salt4 cups flour4 tsp. baking powder2 tsp. vanilla1 tbsp. lemon extractIcing2 cups powdered sugar1/2 stick butterscant teaspoon orange rindOrange juice
Cookies: Cream shortening and sugar, add beaten eggs and cream. Add carrots and blend well. At this point I add flavorings. Add sifted dry ingredients. Drop onto greased cookie tins. ( I use the silicone mats no grease) Bake in 350 degree oven until lightly browned just edges. 17 minutes. Frost with orange butter icing.
