South of the Border Chicken

Ingredients
1 bell pepper, cut into strips 1-2 jalapeno peppers, sliced thinly1 pound boneless skinless chicken breast, cut into 1-inch strips 2 cloves garlic, minced1 teaspoon olive oil1 cup brown rice, cooked1 cup black beans, drained1/3 cup light sour cream 16 ounces salsa 3/4 cup light colby or cheddar cheese, shredded
Directions
Sauté peppers and chicken in oil until lightly browned about 5 mins. Add minced garlic and saute for several seconds. Season with salt and pepper.


Spread the rice in a 9x9 pan prepared with cooking spray. Layer with black beans - season with lime, if desired. Top with chicken mixture.


Mix sour cream and salsa and spoon over chicken. Sprinkle with cheese.


Bake at 350 degrees for 25-30 minutes.
