Kumara Salad

Ingredients
4-6 medium Kumara (Sweet Potato)bacon1 Orange2 Tbsp mayonaisse
Directions
Peel Sweet Potato and cut into cubes.
Roast until cooked and slightly browne. No oil is neccessary.
Grill bacon until cooked but not crispy, let cool. Remove fat and tead or slice into small pieces
Peel orange and dice into 1-2cm cubes
Toss all together and mix through mayonnaise

This salad tastes best when made a few hours in advance to let the flavours mix. IT can be made by boiling the kumara, for a quicker option
